The 19th Century
MANKIND HAS BEEN MIXING SPIRITUOUS DRINKS SINCE ABOUT AN HOUR AFTER WE DISCOVERED THE PROCESS OF DISTILLATION, BUT THE COCKTAIL ITSELF WASN’T NAMED AS SUCH UNTIL SOME TIME AROUND 1803. ALL THE DRINKS IN THIS SECTION WERE CREATED OR ENJOYED DURING THIS GOLDEN AGE.
The World Famous Jake's Bar Mint Julep £6.00
The Julep, the crowning glory of any Cocktail List. Most poetically described as The Zenith of Man’s pleasure by one Judge J SoulleSmith. We think we make a pretty darned good one here at Jake's: Mint infused Woodford Reserve Bourbon poured over tightly packed crushed ice, dusted with powdered sugar and garnished with an abundance of fresh mint.
The Manhattan From £7.00
This drink first appeared in print in Professor Jerry Thomas’s Bartender’s Guide of 1884 we make ours with Rittenhouse Rye Whiskey, Antica Formula Sweet Vermouth, Noilly Prat Dry Vermouth and Abbotts Bitters, all finished off with a cocktail cherry.
The Bijou Cocktail £7.00
Courtesy of one of the 19th Centuries great Bartenders: Mr Harry Johnson. This marvelously simple drink consists of equal measure Plymouth Gin, Antica Formula Sweet Vermouth and Green Chartreuse. Adorned with a cherry and a lemon twist.
I LOVE THE 70's & 80's
SOME PEOPLE CALL THIS ERA “THE DARK AGES” OF THE COCKTAIL AND IT IS TRUE THAT SOME TERRIBLE CRIMES AGAINST GOOD DRINKING WERE PERPETRATED AROUND THIS TIME. WE, HOWEVER, THINK A FEW OF THESE ARE WORTH A RE-EVALUATION.
FROZEN STRAWBERRY DAIQUIRI £6.50
Santa Theresa Rum & Wild Strawberry Liqueur blended with fresh strawberries, fresh lime and just a little sugar. The whirl of the blender is like music to our ears when we put together one of these. Best served whilst listening to Billy Ocean.
THE BRAMBLE £6.50
Bombay Sapphire Gin fixed with lemon juice and sugar then laced with blackberry liqueur. Created by the one and only Mr Dick Bradsell at Fred’s Club, Soho, London in the mid 80’s and enjoyed by discerning Englishmen ever since.
THE LEONARDO £8.00
Simply, fresh strawberries mixed with the Italian sparkling wine Prossecco. If you find yourself in Florence call into Harrys Bar and ask Leonardo Vadorini to knock you one up- it will be better than ours but, then, we are merely human.
ALABAMA SLAMMER £7.00
We couldn’t let this section pass without doffing our hat to Mr Brian Flanagan and his wonderful poetry. The Sex on the Beach? The schnapps made from peach? The Velvet Hammer? They were all pretty awful truth be told, but The Alabama Slammer? Now you’re talking. Vodka, Southern Comfort, Sloe Gin and orange juice.
SAN-FRANCISCO £6.50
As far as we can tell this one was popularised at Ike’s Bistro in Leeds in the early 1980’s. Vodka, Peach Liqueur and Grenadine with orange and pineapple juices. In that altogether more innocent time the drink was listed on the menu as: Very Gay!
JUNE BUG £7.00
Everybody has a guilty pleasure, agreed? This is ours, don’t tell anyone you drank it here though alright? Coconut Rum, Melon Liqueur and Banana Liqueur with pineapple and lime juices. Shhhsh.
THE BLUE LADY £6.50
Is there anything quite so satisfying as sipping a blue drink? Does anything else mark you our as a person of style and substance quite so elegantly? We think not. Gin, Blue Curacao, lemon juice and egg white.
THE PIÑA COLADA £6.50
Actually invented long before this era, but it enjoyed something of a heyday in the 80’s. Goslings Black Seal Bermudan Rum & Appleton Estate White Jamaican Rum blended with coconut cream and pineapple then topped with Jamaican allspice and a cherry. Reviled, rejected and disparaged over the years, unfairly we think. Say it quietly, but this might just be our favourite.
Island Drinks

THE WAR HAD ENDED AND THE WORLD HAD A NEW FOUND OPTIMISM AND ALSO A NEW FOUND APPRECIATION FOR THE EXOTIC- SPECIFICALLY RUM. ALL THESE DRINKS HAIL FROM, OR WERE INSPIRED BY, THE TIKI COCKTAIL CRAZE WHICH DOMINATED THIS ERA.

The Hurricane Jake's £10.00
A blend of 4 tropical rums and 4 exotic juices served in a giant hurricane lamp and decked with a blazing island of fire.
Pino Pepe £8.00

Appleton White Rum, Finlandia Vodka and Cointreau blended with pineapple, lemon and lime taken from Trader Vics 'Bartenders Guide' one of the bibles for aficionados of the Tiki era.

Honeysuckle £7.00
Havana Club Blanco shaken with honey, lime & orange juice: from a 1953 copy of David Embury’s 'The Fine Art of Mixing Drinks.'
The Tropical Itch £8.50
Passion fruit, 151 proof Rum, Bourbon, Orange Curacao and Angostura Bitters decked with pineapple and mint.
The Missionary's Downfall £7.00
Chairman’s Reserve Rum from St Lucia, Peach Liqueur, fresh pineapple, honey, lime and mint. Don the Beachcomber invented many great cocktails, this is one of his lesser known drinks, but we think it’s just perfect.
Caipirinha £6.00
Sagatiba Cachaca from Brazil with sugar and fresh lime. We like to enjoy ours as it comes but if you’d like strawberry, passion fruit or raspberry added to the mix then we will happily oblige, we’d urge you against the olive version however.
Don The Beachcombers Zombie £8.00
Bacardi 8 year old Puerto Rican Rum, 151 Proof Rum from Bermuda, White Puerto Rican Rum with pineapple, lemon, lime, passion fruit brown sugar and Angostura Bitters.
Future Proof
THE COCKTAIL HAS ENJOYED SOMETHING OF A REVIVAL IN THE CLOSING YEARS OF THE LAST MILLENNIUM AND THE OPENING DECADE OF, THIS, THE 21ST CENTURY. ALL THE DRINKS IN THIS PAGE WERE CREATED DURING THIS PERIOD. A TIME, WE LIKE TO THINK, THAT COCKTAIL HISTORIANS WILL LOOK BACK AT IT WITH AFFECTION IN THE YEARS TO COME
CHAMPAGNE MOJITO £8.00
Mint, lime and sugar blended with Champagne and served long over cracked ice. We don’t quite recall when this wondrous drink first graced our palates, though it has become one of our firm favourites since.
TOMMY’S MARGARITA £7.00
Herradura Blanco Tequila, Agave Syrup and fresh lime, served over ice with no garnish and no salt rim. If you’d prefer yours made to the more conventional recipe then, of course, we are happy to oblige.
NUCLEAR DAIQUIRI £8.00
When the first nuclear bombs were tested in Bikini Atoll the locals were probably sipping on something like a Daiquiri as they watched the beautiful mushrooms blossom on their horizon. Our tribute to this golden age of atomic experimentation? Wray and Nephew Overproof Jamaican Rum with Green Chartreuse, Falernum, sugar and lime. Courtesy of our old pal Gregor, cheers buddy.
THE BLIGHTY MOJITO £7.00
Our own twist on the classic drink, using Hendricks Gin, cucumber, lime, sugar and tonic water. If you’d prefer your Mojito the old fashioned way we are, of course, happy to oblige.

Stolichnaya Vanil Vodka, Blackberry Liqueur, lemon and apple juice.
STAIRWAY TO DEVON £6.00
Grey Goose Pear Vodka, with Green Apple Liqueur, ginger ale, fresh lemon & apple.
VERY OLD FASHIONED £8.50
Diplomatico Rum from Venezuela, Appleton VX rum from Jamaica and Pyrat Pistol rum from Anguilla stirred with sugar and orange bitters.
THE MEXICAN 55 £8.00
Ocho Tequila with lemon juice, sugar, Champagne and a dash of Pastis. Our good friend Thomas Estes bought this one to our attention, though it is one Mr Fidel Castro who we have to thank for the name. He believed that the bullets made in Mexico in 1955 were the finest ever created. For those of you who have not acquired a taste for the Pastis it is perfectly acceptable to order the drink without.
THE LARGE HADRON COLADA £10.00
Wray and Nephew overproof rum from Jamaica and Goslings 151 proof Rum from Bermuda combined with pineapple and coconut cream.
RASPBERRY MARCIANO £6.50
Belvedere Black Raspberry Vodka, Raspberry Liqueur, fresh berries and ginger ale.
SALLY CINNAMON £6.00
Vodka, cinnamon and gingerbread syrup with fresh lime and apple juices, dusted with cinnamon.
PALOMA £6.00

El Jimador Tequila with fresh lime juice and sparkling grapefruit soda, served with a salt frosted rim, its been around for years in Mexico but its only in the last couple of years that we Brits have had the chance to taste this wonderful drink.

JACK FASHIONED £8.00
Dreamt up by our tiny friend Mr Jack Hubbard, this drink is one of our favourites of the modern era. Eldorado 12 year old rum from Guyana mixed with Benedictine Liqueur, cigar infused maple syrup and cocktail bitters.
The Jazz Age
DESPITE THE AMERICANS BEST ATTEMPTS TO KILL OFF THE COCKTAIL CRAZE WITH THEIR ILL ADVISED ATTEMPT AT PROHIBITION IN THIS ERA (1920-1933). CREATIVE BARTENDERS ABOUNDED AND MANY OF THEM BROUGHT THEIR KNOW HOW TO EUROPE TO ESCAPE THE GREAT AMERICAN DROUGHT.
CORPSE REVIVER NUMBER TWO £7.00
We took this recipe from Harry Craddock’s 1930 Savoy Cocktail Book. Gin, Cointreau, Lillet Blanc Aperitif and fresh lemon juice. He duly noted that “Four of these taken in quick succession will unrevive the corpse again.”
THE NEGRONI £6.50
Created by an Italian Count, Camillo Negroni circa 1920 and popularised there after. This beguilingly simple drink contains Beefeater Gin, Antica Formula Sweet Vermouth and Campari, on the rocks with an orange wedge.
THE CLOVER CLUB £7.00
Bombay Sapphire Gin, raspberry, lemon juice, sugar and egg white. Created at The Bellevue Stratford Hotel in Philadelphia around the turn of the century, but with something of an enigmatic history, we have adapted this recipe from one found in Albert Stevens Crockett’s ‘Old Waldorf Bar Days’ from 1910.
THE MILLIONAIRE COCKTAIL £7.00
Adapted from a 1937 Cocktail Guide called 'How and When.' This drinks recipe calls for it to be ‘shaken as though with the heeby jeebies.’ So if you catch your bartender slacking on this one be sure to reprimand him or her. Myers Dark Jamaican rum, sloe gin, Apricot Brandy and fresh lime juice.
THE FLYING DORELLIAN £7.00
Bacardi Superior White Rum, Benedictine, Cherry Brandy, lemon juice, Abbott’s Cocktail Bitters and Absinthe, with a grapefruit twist. This drink is actually a modern one of our own creation but was inspired by the glorious days of 1930’s drinking. We named it for Mr Peter Dorelli formerly of The American Bar at The Savoy and one of the true Gentlemen of the cocktail world.
THE AVIATION £7.50
Plymouth Gin, Maraschino Liqueur, creme violette and lemon juice. This beautifully simple drink embodied the elegance of this era. It has a sharpness from the citrus, a light floral note and a distinctive dryness. A connoisseur's choice.
THE FRENCH 75 £9.00
Beefeater Gin, Cointreau, lemon juice and Champagne. For the description we refer you to The Esquire Drink Book: "(the champagne's) restorative powers to patients could bring a million testimonials, and it's heartening influence on the lonely soul is quite incalculable. The gin brings a smile to the lips and a purl to the eyes."
THE MAIDEN'S PRAYER £7.00
Beefeater Gin, Appleton White Rum, Cointreau & lemon juice. Prohibition spawned many forgettable drinks: Pussyfoots, Cubanolas and Bosom Caressers died a merciful death but the Maidens Prayer, thankfully had a little more staying power. (aka Between the Sheets)
